Grilled Asparagus

I love grilling asparagus! It is probably my favorite method of cooking it because it is so delicious and simple.  This lovely asparagus was grown about 15 minutes from where I live and arrived to the market in absolutely perfect condition. If you don't like as much of the stalk, be sure to reserve the part you trim off for making a beautiful asparagus soup.

Grilled Asparagus
-1 Bunch Asparagus, ends trimmed, rinsed and set on a dishcloth to dry
-Olive Oil for drizzling
-Kosher Salt or Murray River Pink Salt
-Freshly Ground Black Pepper
-Optional: Chopped Fresh Herbs or Lemon Zest

Preheat Grill to high heat or prepare charcoal grill for direct heat grilling.  In a large bowl toss asparagus with olive oil, salt and pepper.  Grill over high heat, just long enough to get grill marks.  Remove to sheet pan.  If desired sprinkle with chopped herbs or lemon zest. Note: If doing this in advance, once asparagus is off grill place in fridge to stop cooking process.  Heat in 350 degree oven when ready to serve, for about 4 minutes.  Arrange on platter and serve.  Can be served warm or cold.  Cut up leftover asparagus and add to pasta dishes, omelettes, etc.
